Founded in 2020 by Sébastien Layé, whose family heritage is rooted in Cognac winemaking, and Fabien Dessens, an innovator in beverage craftsmanship, Le Moderato is revolutionizing French wine—full flavour, without the alcohol.
Their wines are crafted at Le Chai Sobre, France’s first centre of excellence for alcohol-free winemaking, sustainably developed in partnership with a local cooperative. A gentle, low-temperature distillation technique preserves the wine’s aromatic profile and natural character, ensuring every sip remains fresh, expressive, and beautifully balanced.
